Beer-Cheese Sauce

1 tablespoon PICS unsalted butter
1/4cup finely chopped yellow onion
1 tablespoon PICS all-purpose flour
1/2cup lager beer
1 garlic clove, minced
1/4cup plus 2 tablespoons PICS heavy cream
3/4 cup PICS shredded sharp Cheddar cheese
1 teaspoon PICS Dijon mustard
1/8teaspoon ground black pepper

1.In medium saucepan, melt butter over medium heat; add 1/4 cup onion and cook 3 minutes or until softened, stirring occasionally. Whisk in flour; cook 1 minute, whisking constantly. Reduce heat to low; cook 1 minute, whisking occasionally.

2. Increase heat to medium; whisk in beer and cook 2 minutes or until reduced by 1/4, whisking occasionally. Add garlic and cream; cook 3 minutes or until thickened, whisking frequently. Remove from heat; gradually whisk in cheese until smooth, then mustard and pepper. Makes about 1-1/4 cups.
