Air Fryer Loaded-Pizza Baked Potatoes

Air Fry: 50 minutes • Serves: 4
1tablespoon unsalted butter, melted
1/2teaspoon kosher salt
2slices applewood smoked uncured bacon, chopped
1/2medium green bell pepper, chopped
1baby bella mushroom, thinly sliced
1/2cup marinara sauce
1cup finely shredded low-moisture part-skim mozzarella cheese 1⁄4 cup grated Parmesan cheese
2teaspoons fresh chopped basil
1.Preheat 3.3-quart or larger air fryer 5 minutes at 400°. Brush potatoes with butter; sprinkle with salt. Place potatoes in air fryer; cook 40 minutes at 400° or until easily pierced with a knife.
2.In small skillet, cook bacon over medium-high heat 5 minutes or until crisp, stirring occasionally; with slotted spoon, transfer to paper towel-lined plate. In same skillet, with drippings, cook pepper and mushroom 5 minutes or until tender-crisp.
3.Cut a 4-inch slit in the top of each potato; fill with marinara, pepper mixture, mozzarella cheese and Parmesan cheese. In 2 batches, if necessary, place potatoes in air fryer and cook 5 minutes at 400° or until golden brown and cheese melts.
4.Serve potatoes sprinkled with basil and bacon.
