Elote Topping

Prep: 15 minutes plus cooling
Cook: 10 minutes • Serves: 10

2 medium ears fresh white corn, silks and husks removed
2 teaspoons PICS olive oil
1/3 cup PICS crumbled feta cheese
3 tablespoons finely chopped red onion
1-1/2 tablespoons chopped fresh cilantro
1-1/2 tablespoons PICS unsalted butter, softened
1 tablespoon fresh lime juice
1 tablespoon PICS mayonnaise
1 tablespoon PICS sour cream
1/4 teaspoon chili powder

1.Heat grill pan over medium-high heat. Brush corn with oil; place corn in pan and cook 10 minutes or until grill marks appear, turning frequently. Cool 10 minutes.

2.In medium bowl, stir remaining ingredients. Cut corn kernels from cobs; fold into mayonnaise mixture. Makes about 1-1/2 cups.
