Pear-Ricotta Pancakes

2 tablespoons PICS unsalted butter
2 medium Bosc pears, peeled, cored and chopped
2 tablespoons PICS brown sugar
1/2teaspoon PICS ground cinnamon
1/8 teaspoon ground nutmeg
2 cups PICS complete pancake mix
1/2cup PICS whole milk ricotta
PICS nonstick cooking spray
1/2cup PICS maple syrup, warmed

1.In large skillet, melt butter over medium-high heat. Add pears; cook 5 minutes or until tender, stirring occasionally. Stir in brown sugar, 1/4 teaspoon cinnamon and nutmeg; cook 1 minute or until brown sugar dissolves, stirring occasionally. Makes about 2 cups.

2.Prepare pancake mix as label directs; whisk in 1/4 cup ricotta and remaining 1/4 teaspoon cinnamon. Makes about 3 cups.

3.Preheat griddle or large nonstick skillet over medium heat; spray with cooking spray. Pour batter onto griddle using 1/4-cup measuring cup to make 4 pancakes; cook 5 minutes or until golden brown and set, turning once. Repeat with remaining batter, spraying griddle with cooking spray as needed between batches. Makes 12 pancakes.

4.Serve pancakes topped with remaining 1/4 cup ricotta, pear mixture and syrup.
