Pasta Fagioli

Cook: 30 minutes • Serves: 8

1tablespoon olive oil
1package (16 ounces) sweet Italian sausage links
1medium white onion, chopped
2garlic cloves, minced
1container (32 ounces) less sodium chicken broth
1can (14.5 ounces) Italian style diced tomatoes with olive oil, garlic & spices
2teaspoons chopped fresh thyme
1cup dry ditalini pasta
1can (15.5 ounces) cannellini beans
1/2cup grated Parmesan cheese

1.In large saucepot, heat oil over medium heat. Add sausage; cook 7 minutes or until internal temperature of sausage reaches 160°, turning frequently. Transfer sausage to cutting board; slice sausages 1/4-inch thick crosswise.

2.In same saucepot, cook onion 4 minutes or until softened, stirring occasionally. Add garlic; cook 1 minute, stirring occasionally. Add broth, tomatoes with their liquid and thyme; increase heat to medium-high and heat to a simmer. Reduce heat to medium-low; add pasta and cook 6 minutes. Add beans with their liquid and sausage; cook 6 minutes. Serve soup sprinkled with cheese. Makes about 12 cups.
