Cranberry-Pomegranate Ring

Prep: 20 minutes plus chilling
Cook: 5 minutes • Serves: 12

1 cup 100% pomegranate juice
2 packages (3 ounces each) cranberry or cherry-flavored gelatin
1 can (12 fluid ounces) Bubly® lime sparkling water
1-1/2 cups fresh cranberries, thawed if necessary
3/4 cup pomegranate arils
1/2 cup chopped walnuts plus additional for garnish (optional)
1-1/2 teaspoons lime zest
1-1/2 cups Cool Whip original whipped topping, thawed

1. In small saucepot, heat pomegranate juice to a boil over high heat. Place gelatin in large bowl; whisk in pomegranate juice until dissolved. Stir in sparkling water; cover and refrigerate 1 1/2 hours or until thickened.

2. In food processor, pulse cranberries until small pieces remain. Stir pomegranate arils, walnuts, zest and cranberries into gelatin mixture; pour into 5-cup ring mold or 6-cup Bundt® pan. Cover pan tightly with plastic wrap and refrigerate 3 hours or until set.

3. To release ring, gently run thin, flexible spatula around inside edge of ring; dip bottom of pan in hot water for 3 seconds. Place plate over pan; invert to release ring. Cut into 12 slices; serve topped with Cool Whip and walnuts, if desired.
