Grilled Everything Bagel & Smoked Salmon Panzanella

Grill: 3 minutes • Serves: 8

6 plain bagel thins
2 tablespoons PICS extra virgin olive oil
2 tablespoons PICS everything bagel seasoning
1 package (4 ounces) PICS smoked salmon, thinly sliced crosswise
3 Roma tomatoes, chopped
1 medium English cucumber, chopped
1 cup chopped green and/or red leaf lettuce
1 cup thinly sliced radishes
3/4 cup thinly sliced fennel
1/2 cup lite poppy seed dressing
1/2 cup thinly sliced red onion

1.Prepare outdoor grill for direct grilling over medium heat; brush cut sides of bagels with oil. Lightly brush outside of bagels with water; sprinkle with seasoning, patting lightly so seasoning adheres. Place bagels, cut side down, on hot grill rack; cover and cook 3 minutes or until grill marks appear.

2.In large bowl, add salmon, tomatoes, cucumber, lettuce, radishes, fennel, dressing and onion; carefully tear bagels into bite-size pieces over bowl and toss. Makes about 12 cups.
