Hawaiian Pulled Pork Sliders (Day 2)

Prep: 20 minutes
Microwave: 3 minutes • Serves: 6

3 cups leftover pulled pork (from Slow Cooker BBQ Pulled Pork Bowls recipe)
1 can (20 ounces) PICS pineapple tidbits in 100% pineapple juice, drained, juice reserved
1 tablespoon Full Circle hoisin sauce
2 teaspoons PICS honey
1/4 teaspoon Full Circle ground cayenne pepper
1 medium orange bell pepper, halved and thinly sliced
1/2 small red onion, halved and thinly sliced
1/2 cup shredded carrots
1 teaspoon whole celery seeds
1/4 teaspoon kosher salt
1 package (12 ounces) Hawaiian sweet rolls, split lengthwise

1. In medium microwave-safe bowl, stir pork, 1/2 the reserved pineapple juice, hoisin sauce, honey and cayenne pepper; heat on high in microwave oven 3 minutes or until heated through, stirring twice. Makes about 3 cups.

2. In separate medium bowl, toss bell pepper, onion, carrots, celery seeds, salt, pineapple tidbits and remaining 1/2 reserved pineapple juice. Makes about 3 cups.

3. Serve pork mixture in rolls topped with bell pepper mixture.
