Awesome Avocado Smoothie Bowl

Prep: 15 minutes plus freezing and standing • Serves: 4

1 cup PICS original unsweetened coconut milk
2 tablespoons Full Circle Market™ organic chia seeds
1 avocado, peeled, pitted and chopped
1/2 cup loosely packed Full Circle Market™ organic baby spinach
1/2 cup unsweetened pineapple juice
2 large bananas, sliced and 1 frozen
1 tablespoon PICS honey
1 kiwi, peeled, quartered and sliced
1 cup PICS freshly frozen berry medley, thawed
1/4 cup PICS almond vanilla granola
1/4 cup PICS chopped walnuts, toasted
Poppy seeds and/or sesame seeds for garnish (optional)

1. In glass, stir coconut milk and seeds; let stand 10 minutes.

2.In blender, purée avocado, spinach, pineapple juice, honey, frozen banana and coconut milk mixture. Makes about 4 cups.

3.Pour smoothie mixture into 4 serving bowls; evenly top with kiwi, berry medley, granola, walnuts and sliced banana. Makes 4 bowls.

4.Serve bowls garnished with poppy seeds and/or sesame seeds, if desired.

Chef Tips:
Use a rubber spatula to scrape the chia seed gel that has settled to the bottom of the glass into the blender.

To toast walnuts: In large skillet, cook walnuts over low heat 8 minutes or until lightly browned and fragrant, stirring frequently; transfer to a plate
