Caramel Apple-Bacon Skewers

Prep: 20 minutes
Cook: 5 minutes Serves: 8

1/2 pound PICS bacon, chopped
2 medium Granny Smith apples, halved, cored and cut into 1-inch pieces
2 tablespoons fresh PICS lemon juice
1/4 teaspoon PICS ground cinnamon
16 (4-inch) wooden skewers
3 tablespoons caramel topping
2 tablespoons chopped PICS roasted unsalted peanuts

1. In large skillet, cook bacon over medium-high heat 5 minutes or until crisp, stirring occasionally; transfer to paper towel-lined plate.

2. In large bowl, toss apples, lemon juice and cinnamon. Thread apples onto skewers; place on serving platter. Drizzle skewers with caramel; sprinkle with peanuts and bacon. Makes 16 skewers.
