Chicken & Chickpea Lettuce Cups

Prep: 15 minutes • Serves: 4

2 leftover chicken breasts, shredded (from Lemon-Pepper Chicken & Rice recipe)
1 cup drained and rinsed canned PICS chickpeas, coarsely chopped
1/3 cup finely chopped red onion
3 tablespoons PICS olive oil
2 tablespoons finely chopped fresh dill
1 tablespoon PICS lemon juice
1/4 teaspoon PICS salt
1/4 teaspoon PICS black pepper
12 bibb lettuce leaves
1/2 large Full Circle avocado, peeled, pitted and chopped

1. In large bowl, stir chicken, chickpeas, onion, oil, dill, lemon juice, salt and pepper. Makes about 4 cups.

2. Serve chicken mixture in lettuce leaves topped with avocado.
