Patriotic Ice Cream Sandwiches
Prep: 20 minutes plus freezing • Serves: 16
1-1/2 cups PICS vanilla bean ice cream, slightly softened
2 tablespoons blue sugar sprinkles
2 tablespoons red sugar sprinkles
1.Line rimmed baking pan with parchment paper; place in freezer. For each sandwich, spread underside of 1 cookie with ice cream; top with 1 cookie, underside down. Sprinkle half of the edges of ice cream with blue sprinkles; sprinkle remaining half with red sprinkles, gently shaking off excess, and place on prepared pan in freezer. Repeat with remaining cookies, ice cream and sprinkles to make 15 more sandwiches; freeze sandwiches at least 1 hour or up to overnight. Makes 16 sandwiches.
