Grilled Honey-Lime Marinated Pork & Pineapple Skewers

Prep: 15 minutes plus marinating
Grill: 8 minutes • Serves: 4

1/4 cup fresh lime juice
1/4 cup olive oil
1/4 cup pure honey
1 teaspoon lime zest
1/2 teaspoon kosher salt
1/2 teaspoon ground black pepper
1-1/4 pounds fresh boneless pork tenderloin, cut into 1-inch pieces
8 (10-inch) wooden skewers
16 fresh pineapple chunks
Chopped fresh cilantro for garnish (optional)
Crushed red pepper flakes for garnish (optional)

1.In small bowl, whisk lime juice, oil, honey, lime zest, salt and black pepper. Makes about 3/4 cup marinade.

2.Place pork in large zip-top plastic bag; pour marinade over pork. Seal bag, pressing out excess air; massage pork in bag to coat and refrigerate at least 2 or up to 8 hours.

3.Soak skewers in water 20 minutes; prepare outdoor grill for direct grilling over medium-high heat. Remove pork from marinade; discard marinade. Alternately thread pork and pineapple onto skewers. Place skewers on hot grill rack; cover and cook 8 minutes or until internal temperature of pork reaches 145°, turning once halfway through grilling. Makes 8 skewers.

4.Serve skewers garnished with cilantro and/or crushed red pepper, if desired.
