Irish CB & Dubliner Grilled Cheese

Cook: 16 minutes • Serves: 4
1 tablespoon finely chopped fresh chives
1 tablespoon finely chopped fresh parsley
8 slices Irish soda bread
1/4 cup Kerrygold® salted Irish butter, softened
1/4 cup PICS horseradish mustard
1 package (7 ounces) Kerrygold® Dubliner® cheese, thinly sliced
2 cups sliced cooked or leftover corned beef
1 cup coarsely chopped leftover or prepared cooked cabbage
1.In medium bowl, stir mashed potatoes, chives and parsley.
2.Spread 1 side of bread slices with butter. Turn bread slices and spread 4 with mustard and remaining 4 with potato mixture; top mustard slices with half the cheese, corned beef, cabbage, remaining half the cheese and 4 bread slices, potato mixture side down.
3.In 2 batches, heat large skillet over medium-low heat. Add sandwiches; cook 8 minutes or until bread is golden brown and cheese is melted, turning once and pressing down occasionally with large spatula. Makes 4 grilled cheeses.
