Roast Beef & Horseradish Cheddar Sandwich

2 tablespoons horseradish mustard
2 teaspoons chopped fresh chives
1 loaf (13 ounces) PICS Tuscan baguette, quartered crosswise, then each piece halved horizontally
1/2 pound thinly sliced Market 32 deli roast beef
4 slices PICS horseradish Cheddar cheese
2 Roma tomatoes, thinly sliced crosswise
1/4 cup thinly sliced Market 32 red onion
1 cup loosely packed Full Circle baby arugula
1. In small bowl, whisk sour cream, mustard and chives.
2. Spread cut sides of top halves of baguette with sour cream mixture; top bottom halves of baguette with roast beef, cheese, tomatoes, onion, arugula and top halves of baguette, sour cream mixture side down. Makes 4 sandwiches.
