Better-For-You Spicy & Creamy Tomato Pasta
Prep: 15 minutes
Cook: 10 minutes • Serves: 4
1 tablespoon PICS olive oil
1 small Market 32 yellow onion, halved and thinly sliced
2 garlic cloves, minced
1/4 cup PICS tomato paste
1 cup oat milk
1/2 teaspoon PICS crushed red pepper flakes
1/4 teaspoon PICS smoked paprika
1/2 teaspoon PICS kosher salt
2 tablespoons PICS unsalted butter, softened
1/4 cup PICS grated Parmesan cheese
1.Cook pasta as label directs; reserve 1/2 cup cooking water. Drain pasta; return to saucepot
and cover.
2.In large skillet, heat oil over medium-high heat. Add onion; cook 5 minutes or until tender, stirring occasionally. Add garlic; cook 1 minute or until fragrant, stirring occasionally. Add tomato paste; cook 1 minute, stirring occasionally. Add milk, crushed red pepper, paprika and salt; cook 2 minutes or until slightly thickened, stirring occasionally. Add butter, pasta and reserved cooking water; cook 1 minute or until heated through and butter is melted, stirring occasionally. Makes about 5 cups.
3.Serve pasta sprinkled with cheese.
