4 teaspoons PICS Dijon mustard
2 teaspoons finely chopped fresh tarragon leaves
8 thick slices leftover cooked turkey (about 12 ounces)
4 slices PICS Swiss cheese
1 cup refrigerated or jarred Alfredo sauce
2 tablespoons PICS unsalted butter
4 PICS large eggs
1.Place oven rack about 6 inches from broiler heat; preheat broiler to high. Place bread in single layer on rimmed baking pan; broil 30 seconds or until lightly browned, turning once halfway through broiling.
2.In small bowl, stir mustard and tarragon. Spread 1 side of each slice of bread with mustard mixture; top with 2 slices turkey and 1 slice cheese. Broil sandwiches, cheese side up, 2 minutes or until cheese is melted. Turn off oven; keep sandwiches warm in oven.
3.In small microwave-safe bowl, heat Alfredo, covered, in microwave oven 1-1/2 minutes or until heated through, stirring once halfway through cooking. In large skillet, melt butter over medium heat. Add eggs; cook 2 minutes. Pour 1/4 cup water into skillet around eggs; cover, remove from heat and let stand 4 minutes or until desired doneness. Makes 4 eggs.
4.Serve sandwiches topped with eggs and Alfredo. Makes 4 croque madame.
