Sweet Potato Latkes with Honey-Lime Yogurt & Cashews

2 tablespoons PICS honey
1 teaspoon PICS lime juice
1 teaspoon lime zest
2 large North Carolina sweetpotatoes, peeled (about 2 pounds)
2 PICS large eggs
1/2 teaspoon PICS salt
1/2 teaspoon PICS ground black pepper
1/4 cup PICS all-purpose flour
3/4 cup PICS olive oil
1/2 cup chopped PICS roasted and salted whole cashews
1.Preheat oven to 250°; line rimmed baking pan with paper towel. In medium bowl, stir yogurt, honey, lime juice and lime zest; cover and refrigerate. Makes about 1 cup.
2.With largest holes of box grater, grate potatoes. In large bowl, beat eggs, salt and pepper. Add flour and potatoes; toss. Makes about 4 cups.
3.In large nonstick skillet, in 3 batches, heat 1/4 cup oil over medium heat; drop 1/4 cupfuls potato mixture into mounds in skillet. With spatula, press mounds into 3-inch patties; cook 6 minutes or until golden brown, turning once. Transfer latkes to prepared pan; keep warm in oven. Makes 16 latkes.
4.Serve latkes topped with yogurt mixture sprinkled with cashews.
