Skillet Classic Peach Cobbler

Prep: 20 minutes plus standing
Grill: 30 minutes • Serves: 8

PICS nonstick cooking spray
6 medium peaches, halved, pitted and sliced
1/3 cup PICS brown sugar
2 tablespoons fresh lemon juice
1/2 teaspoon PICS ground cinnamon
3/4 cup PICS all-purpose flour
1/2 cup PICS granulated sugar
1/2 teaspoon kosher salt
1/2 cup cold unsalted PICS butter (1 stick), cut into 1/2-inch pieces
2 tablespoons whole buttermilk
PICS vanilla ice cream for serving (optional)

1. Prepare outdoor grill for direct grilling over medium-low heat; spray 10-inch cast-iron skillet with cooking spray. In large bowl, toss peaches, brown sugar, lemon juice and cinnamon; spread in prepared skillet.

2. In food processor, pulse flour, granulated sugar and salt until incorporated. Add butter; pulse until pea-size pieces remain. Add buttermilk and pulse until incorporated; sprinkle over peach mixture. Place skillet on hot grill rack; cover and cook 30 minutes or until edges are bubbly and top is golden brown, rotating once. Let stand 5 minutes. Makes about 6 cups.

3. Serve cobbler topped with ice cream, if desired.
