Savory Waffles + Soup for Dipping
Prep: 20 minutes plus standing
Cook: 20 minutes • Serves: 4
1⁄3 cup PICS vegetable oil
1/4 teaspoon PICS salt
1/4 teaspoon PICS ground black pepper
1/2 (8-ounce) block PICS sharp Cheddar cheese, shredded (about 1 cup)
1/2 cup sliced green onions plus additional for garnish (optional)
PICS nonstick cooking spray
2 cans (10.75 ounces each) PICS healthy condensed tomato soup
1.Preheat waffle iron. In large bowl, whisk waffle mix, oil, salt, pepper and 1-1/2 cups water; fold in cheese and onions. Let waffle mix stand 5 minutes. Makes about 3 cups waffle batter.
2.Spray both sides of waffle iron with cooking spray; ladle 3/4 cup waffle batter in center of iron. Close iron; cook waffles 5 minutes or until golden brown. Repeat with remaining batter to make 3 more waffles. Transfer waffles to cutting board; cut waffles into quarters, then cut each quarter lengthwise in half. Makes about 32 waffle sticks.
3.Prepare soup as label directs. Makes about 4 cups soup.
4.Serve soup garnished with onions, if desired, along with waffle sticks.
