Ramen Carbonara

Prep: 15 minutes
Cook: 13 minutes • Serves: 4

3 slices PICS thick-cut bacon, chopped
1 small Market 32 white onion, chopped
1/2 cup PICS frozen sweet peas, thawed
2 packages (3 ounces each) chicken flavor ramen noodles
1 PICS large egg
1 PICS large egg yolk
1/2 cup PICS shredded Parmesan cheese plus additional for garnish (optional)
1/2 teaspoon PICS ground black pepper
1/4 cup Kewpie mayonnaise
PICS crushed red pepper flakes for garnish (optional)

1.In large skillet, cook bacon over medium-high heat 5 minutes or until bacon is crisp, stirring occasionally; with slotted spoon, transfer bacon to paper towel-lined plate.

2.In same skillet with drippings, cook onion over medium-high heat 3 minutes, scraping browned bits from bottom of skillet with wooden spoon. Add peas; cook 2 minutes or until onion is tender. Transfer onion mixture to same plate with bacon. Makes about 1-1/2 cups bacon mixture.

3.Reserve seasoning packets from noodle packages. In large saucepot, heat 4 cups water to a boil over medium-high heat; stir in noodles. Place large heat-safe bowl that fits tightly inside rim of saucepot into saucepot to create double boiler. Add egg, egg yolk, cheese, black pepper and reserved seasoning packets; whisk and cook 3 minutes or until noodles are tender and cheese is melted, whisking egg mixture frequently. Carefully remove bowl from saucepot; whisk in mayonnaise.

4.Drain noodles; transfer to bowl with egg mixture. Add bacon mixture; toss. Makes about 3 cups carbonara.

5.Serve carbonara garnished with crushed red pepper and/or cheese, if desired.
