Pumpkin Horchata
Prep: 10 minutes plus standing • Serves: 6
1 cup PICS dry long grain white rice
1 can (12 fluid ounces) PICS evaporated milk
1/2 cup canned PICS solid pack pumpkin
1/2 cup PICS sweetened condensed milk
1-1/2 teaspoons pumpkin pie spice
Ice
1.In large bowl, stir cinnamon sticks, rice and 2 cups hot water; cover and let stand at least 8 hours or overnight. Remove cinnamon sticks.
2.In blender, purée rice mixture, evaporated milk, pumpkin, condensed milk and pumpkin pie spice until smooth; strain through fine-mesh strainer into pitcher and discard solids. Stir in at least 1 cup cold water or more to reach desired consistency. Makes about 6 cups.
3.Serve horchata over ice garnished with cinnamon sticks, if desired.
