Protein Peanut Butter-Banana Bread

Prep 20 minutes plus cooling
Bake 1 hour 5 minutes • Serves: x

PICS™ vegetable oil non-stick cooking spray
1-1/2 cups white whole wheat flour plus additional for dusting
3 large ripe bananas
2 large eggs
1 cup whole milk
3/4 cup packed PICS™ light brown sugar
1/2 cup PICS™ creamy peanut butter
1/2 cup vanilla protein powder
1 tablespoon PICS™ ground cinnamon
1 teaspoon baking powder
1/2 cup plus 2 tablespoons dark chocolate chips

1.Preheat oven to 325°. Spray 9 x 5-inch loaf pan with cooking spray; dust bottom and sides of pan with flour.

2.In large bowl, mash bananas with fork; whisk in eggs and milk. Stir in sugar, peanut butter, protein powder and cinnamon. Sift baking powder and flour into banana mixture; stir just until combined. Fold in 1/2 cup chocolate chips; spread batter in prepared pan and sprinkle with remaining 2 tablespoons chocolate chips. Bake bread 1 hour 5 minutes or until toothpick inserted in center comes out clean and top is golden brown; cool bread in pan on wire rack 10 minutes. Run a small knife around edge of pan to loosen; invert onto rack to cool completely.

3.Cut bread crosswise into 10 (3/4-inch-thick) slices.
