Pomegranate Liqueur
1-1/2 cups pomegranate arils
1-1/2 cups vodka
1 (32-ounce) glass jar with lid
Pomegranate Cosmo
1/2 cup plus 2 tablespoons orange-flavored liqueur such as Cointreau or triple sec
2 tablespoons fresh lime juice
Lime wedges and granulated sugar for serving
Lime wheels for garnish (optional)
1. Pomegranate Liqueur: In small saucepot, heat sugar and 1 cup water to a simmer over medium-high heat. Simmer 3 minutes or until mixture is clear; do not stir. Remove from heat; cool.
2.In food processor, pulse pomegranate arils to coarsely chop; transfer to medium bowl. Stir in vodka and sugar mixture; pour into jar and secure with lid. Let stand 3 weeks in cool, dark place, shaking every other day. Makes about 4 cups.
3.Strain Pomegranate Liqueur through fine-mesh strainer into bowl; discard solids. Refrigerate in an airtight container up to 6 months. Makes about 3-1/2 cups.
4. Pomegranate Cosmo: For each serving, in cocktail shaker or jar, add crushed ice, 2-1/2 tablespoons each Pomegranate Liqueur and Cointreau, and 1-1/2 teaspoons lime juice; cover and shake to combine. Run lime around rim of martini glass; dip rim in sugar. Strain Pomegranate Cosmo into prepared glass; garnish with lime wheels, if desired.
