Parmesan-Scallion Spread

Prep: 10 minutes • Serves: 12

2 medium scallions, finely chopped
1 medium garlic clove, crushed with press
1/2 cup PICS unsalted butter (1 stick), softened
2 tablespoons PICS grated Parmesan cheese
1 tablespoon fresh lemon juice
3/4 teaspoon PICS salt
2 tablespoons finely chopped fresh parsley

1. In medium bowl, whisk together all ingredients, except parsley, until well combined; fold in parsley. If not serving right away, cover and refrigerate until ready to use. Allow chilled spread to stand at room temperature 30 minutes to soften slightly before serving. Makes about 3/4 cup.
