Korean BBQ Ground Beef Rice Bowl

Cook: 25 minutes • Serves: 4
1 pound 93% lean ground beef, crumbled
1/2 cup Korean BBQ sauce plus additional for serving (optional)
1/2 English cucumber, thinly sliced
1 cup kimchi
1 cup matchstick carrots
1/2 cup thinly sliced red and/or green chile peppers
4 green onions, thinly sliced
1 tablespoon sesame seeds
1.Prepare rice as label directs.
2.In large, nonstick skillet, cook beef over medium-high heat 8 minutes or until browned, breaking up beef with side of spoon. Stir in BBQ sauce; cook 2 minutes or until slightly thickened.
3.In large bowl, toss cucumber, kimchi, carrots and peppers. Divide rice into 4 bowls; top with beef mixture and vegetable-kimchi mixture. Sprinkle with green onions and sesame seeds; drizzle with additional BBQ sauce, if desired.
