Greek Grilled Cheese

Prep: 15 minutes
Cook: 12 minutes • Serves: 4

8 slices whole-grain or whole wheat bread
PICS olive oil nonstick cooking spray
8 slices mozzarella cheese
3 medium refrigerated ready-to-eat cooked beets (not pickled), sliced and patted dry
2 Roma tomatoes, sliced
1/2 cup thinly sliced cucumber
1/4 cup drained PICS mild banana pepper rings, patted dry
1/4 cup drained and sliced PICS roasted red peppers, patted dry
1/2 cup PICS crumbled feta cheese
1 teaspoon dried oregano

1.Spray 1 side of each bread slice with cooking spray. Place 4 slices, sprayed side down, on work surface; top with mozzarella cheese, beets, tomatoes, cucumber, banana peppers, red peppers, feta cheese, oregano and remaining 4 bread slices, sprayed side up.

2.Heat large skillet over medium heat. In 2 batches, cook sandwiches 6 minutes or until bread is golden brown and mozzarella cheese is melted, turning once and pressing down occasionally with large spatula; cut sandwiches diagonally in half. Makes 4 grilled cheeses.
