Cranberry-Pomegranate Glazed Salmon

PICS nonstick cooking spray
2 navel oranges, 1 zested (about 1-1/2 tablespoons) and juiced (about 1/2 cup), 1 thinly sliced crosswise
1 cup fresh or frozen Ocean Spray® cranberries
3/4 cup Ocean Spray® cranberry juice
1/2 cup Full Circle pomegranate juice
1/2 cup red wine
1/4 cup PICS honey
2 tablespoons minced shallot
1-1/2 teaspoons fine sea salt
1 Market 32 whole salmon fillet (about 2-1/2 pounds)
1/2 teaspoon PICS ground black pepper
Pomegranate arils and/or rosemary sprigs for garnish (optional)

1.Preheat oven to 425°. Line rimmed baking pan with aluminum foil; spray with cooking spray.

2.In medium saucepan, heat orange zest and juice, cranberries, cranberry juice, pomegranate juice, wine, honey, shallot and 1/2 teaspoon salt to a boil over medium-high heat, stirring occasionally. Reduce heat to medium; simmer 20 minutes or until thickened and reduced by half, stirring occasionally. Reserve 1 cup glaze for serving. Makes about 1-1/2 cups glaze.

3.Place salmon on prepared pan; sprinkle with remaining 1 teaspoon salt and pepper. Brush salmon with 1/4 cup glaze; roast 20 minutes or until internal temperature reaches 145°, brushing with 1/4 cup glaze halfway through cooking.

4.Serve salmon drizzled with reserved 1 cup glaze topped with orange slices garnished pomegranate arils and/or rosemary sprigs, if desired.
