Caramelized Onion & Gruyère Mashed Potatoes

1 large Market 32 yellow onion, chopped
2 tablespoons PICS olive oil
1 cup grated Gruyère cheese
1/2 cup PICS whole milk, warmed
4 tablespoons PICS unsalted butter, cut into pieces
2 teaspoons PICS salt
1/4 teaspoon white pepper
1 pinch PICS nutmeg
1. In large covered saucepot, heat potatoes and enough salted cold water to cover by 1 inch to a boil over high heat. Reduce heat to low; simmer, uncovered, 20 minutes or just until potatoes are fork-tender. Drain potatoes; transfer to large bowl.
2.Heat medium saucepot over medium-high heat until hot. Add onion and oil; cook 5 minutes, stirring occasionally. Reduce heat to medium-low; cook 15 minutes or until onion is browned.
3.Add cheese, milk, butter, salt, pepper and nutmeg to potatoes; with mixer on medium-high speed, beat potato mixture 2 minutes or until smooth. Stir in onion. Makes about 6 cups.
