Blackberry Lemonade Bars

Prep: 25 minutes plus cooling
Bake: 45 minutes • Serves: 24

PICS nonstick cooking spray
2 ​cups Domino® granulated sugar
3/4 ​cup PICS unsalted butter (1-1/2 sticks), softened
1-3/4 ​cups King Arthur® all-purpose flour
1 ​cup fresh blackberries plus additional for garnish (optional)
1 ​cup fresh lemon juice
1 ​teaspoon lemon zest
4 PICS large eggs
1/2 ​teaspoon PICS baking powder
1/4 ​teaspoon PICS kosher salt
1/4 ​cup Domino® powdered sugar

1.Preheat oven to 350°. Line 13 x 9-inch baking dish with aluminum foil so that foil extends about 2 inches over sides of dish; spray with cooking spray.

2.In large bowl, with mixer on medium-high speed, beat 1/2 cup granulated sugar and butter 2 minutes or until light and fluffy, scraping down bowl occasionally. Reduce speed to low; gradually add 1-1/2 cups flour and beat 30 seconds or until just incorporated. Press dough into bottom of prepared dish; bake 15 minutes or until lightly browned. Cool completely.

3.In blender, purée blackberries, lemon juice, lemon zest and remaining 1-1/2 cups granulated sugar on high until smooth. Add eggs; blend on high until smooth. Add baking powder, salt and remaining 1/4 cup flour; blend on high until smooth. Pour blackberry mixture over crust; bake 30 minutes or until set. Cool completely.

4.Using overhanging sides of foil, transfer bar to cutting board; remove foil and cut into 24 (2-1/4-inch) squares. Just before serving, dust tops of bars with powdered sugar; garnish with blackberries, if desired. Makes 24 bars.
