Autumn Pomegranate-Rosemary Gin Spritz
Prep: 10 minutes • Serves: 2
1 teaspoon cinnamon sugar
3 rosemary sprigs
1/3 cup Italian bitter apéritif, such as Campari or Aperol
1/4 cup gin
1/4 cup pomegranate juice
Ice
1 cup dry Champagne or sparkling wine
1. In 2 separate wide, shallow dishes, spread simple syrup and cinnamon sugar. Wet rims of 2 (16-ounce) wine glasses with syrup; dip into cinnamon sugar to coat.
2.In cocktail shaker, stir 1 rosemary sprig, apéritif, gin, juice and 1 cup ice until very cold. Makes about 1 cup gin mixture.
3.Fill glasses halfway with ice; strain gin mixture into glasses. Top with Champagne; garnish with remaining 2 rosemary sprigs. Makes 2 spritzes.

Chef Tip:
To make simple syrup: Stir a 1:1 ratio of sugar to water in a small saucepan (i.e., 1 cup sugar to 1 cup water). Heat the sugar mixture just to a boil over medium-high heat, then reduce heat to medium-low and let it simmer until the mixture is clear, about 5 minutes; do not stir.
