Apricot-Bacon Baked Brie

Bake: 14 minutes • Serves: 10

4 slices PICS bacon
20 (1/2-inch-thick) slices Market 32 French baguette
1 (8-ounce) wheel Market 32 Brie cheese
3 tablespoons PICS apricot preserves
1 tablespoon PICS sliced almonds
2 tablespoons PICS brown sugar

1.Adjust 2 oven racks to upper and lower positions; preheat oven to 375°. Place bacon and baguette slices in single layer on 2 rimmed baking pans; bake bacon 17 minutes or until crisp and baguette slices 12 minutes or until lightly browned and crisp. Transfer bacon to paper towel-lined plate; cool and chop. Makes 20 crostini.

2.Place Brie in center of 9-inch round baking dish or cast-iron skillet; spread top with preserves, and sprinkle with almonds and brown sugar. Bake Brie 14 minutes or until very soft. Makes about 1-1/4 cups Brie mixture.

3.Sprinkle bacon over and around Brie; serve with crostini.
