Apple-Braised Short Ribs

1/2 cup plus 2 tablespoons PICS all-purpose flour
1-1/2 teaspoons PICS kosher salt
1/2 teaspoon PICS ground black pepper
3 tablespoons PICS olive oil
3 pounds bone-in beef short ribs
3 medium carrots, chopped
2 celery ribs, chopped
2 medium Honeycrisp apples, peeled, cored and chopped
1 small yellow onion, chopped
2 teaspoons chopped fresh thyme plus additional for garnish (optional)
3 cups Market 32 apple cider
3 cups PICS beef stock
2 tablespoons PICS unsalted butter

1.In wide, shallow dish, whisk 1/2 cup flour, 1/2 teaspoon salt and 1/4 teaspoon pepper.

2.In Dutch oven, heat oil over medium-high heat. In 2 batches, if necessary, dredge ribs in flour mixture, shaking off excess, and place in Dutch oven; cook 8 minutes or until browned, turning once. Transfer ribs to plate.

3.To Dutch oven, add carrots, celery, apples and onion; cook 5 minutes or until vegetables are tender-crisp, stirring occasionally. Add thyme; cook 1 minute or until fragrant, stirring frequently. Stir in cider; cook 10 minutes or until reduced by 1⁄3, stirring occasionally. Add stock, and remaining 1 teaspoon salt and 1/4 teaspoon pepper; heat to a simmer.

4.Preheat oven to 375°. Add ribs to Dutch oven; cook 30 minutes. Remove Dutch oven from heat and cover tightly with oven-safe lid or aluminum foil; bake 2 hours or until very tender and meat falls off the bone. Transfer ribs to platter; cover to keep warm. Makes about 8 ribs and 2 cups braising liquid.

5.Heat Dutch oven with braising liquid, uncovered, over medium-high heat. In small saucepan, melt butter over medium-high heat; whisk in remaining 2 tablespoons flour and cook 2 minutes or until lightly browned. Whisk 1 cup braising liquid from Dutch oven into butter mixture until incorporated; whisk butter mixture back into Dutch oven and cook 5 minutes or until thickened, stirring frequently.

6.Serve short ribs topped with braising liquid garnished with thyme, if desired.
