Asparagus Almondine

Prep: 5 minutes
Cook: 9 minutes • Serves: 8

2 bunches asparagus (about 2 pounds), ends trimmed
4 tablespoons PICS unsalted butter
1/2 cup PICS sliced almonds
1-1/2 tablespoons PICS orange juice
1 tablespoon PICS lemon juice
1/4 teaspoon PICS salt
1/4 teaspoon PICS ground black pepper
2 teaspoons lemon and/or orange zest

1.Heat large covered saucepot of salted water to a boil over high heat. Add asparagus; cook 5 minutes or just until tender. Drain asparagus.

2.In large skillet, melt butter over medium heat. Add almonds; cook 3 minutes or until golden brown, stirring occasionally. Stir in juices, salt and pepper. Add asparagus; cook 1 minute or until asparagus is heated through. Makes about 5 cups.

3.Serve asparagus garnished with zest.
