Green Chile & Avocado Pork Sliders

Cook: 10 minutes • Serves: 6

2 pounds ground pork
1 can (4 ounces) PICS mild diced green chiles
1 teaspoon PICS ground cumin
1 teaspoon kosher salt
1/2 teaspoon ground black pepper
1/4 teaspoon ground cayenne pepper
1 small red onion, halved and thinly sliced
1/2 small head red cabbage, thinly sliced
2 tablespoons PICS lime juice
12 slider buns
3 avocados, peeled, pitted and mashed

1. In large bowl, gently mix pork, green chiles, cumin, 1/2 teaspoon salt, black pepper and cayenne pepper until combined; do not overmix. Form pork mixture into 12 patties; make shallow indentation in center of each patty.

2. Heat large skillet or griddle over medium-high heat. In batches, if necessary, add patties and cook 5 minutes or until golden brown. Turn patties; reduce heat to medium and cook 5 minutes or until internal temperature reaches 160°. Makes 12 sliders.

3. In large bowl, toss onion, cabbage, lime juice and remaining 1/2 teaspoon salt. Makes about 3 cups.

4. Serve sliders in buns topped with onion mixture and avocados.

Chef Tip:
Patties can also be grilled, covered, over medium heat for 7 minutes or until internal temperature reaches 160°, turning once.
