Asian-Inspired Noodles with Shrimp

2 tablespoons unsalted butter
1 pound raw 16-20 count tail-off peeled and deveined shrimp, thawed if necessary
2 tablespoons sesame oil
1 medium red bell pepper, halved and thinly sliced
4 garlic cloves, minced
1/2 cup vegetable broth
2 tablespoons less-sodium soy sauce
2 tablespoons white miso paste
2 tablespoons nutritional yeast
3 green onions, thinly sliced
Chili garlic sauce and/or toasted sesame seeds for garnish (optional)
1. Prepare spaghetti as label directs; drain, return to saucepot and cover.
2. In large skillet, melt butter over medium-high heat. Add shrimp; cook 4 minutes or until browned, turning once. Transfer shrimp to plate.
3. In same skillet, heat oil over medium-high heat. Add pepper; cook 4 minutes or until tender, stirring occasionally. Add garlic; cook 30 seconds or until fragrant, stirring frequently. Stir in broth, soy sauce and shrimp; heat to a simmer and cook 2 minutes or until shrimp turn opaque throughout, stirring occasionally. Stir in miso and nutritional yeast until incorporated; add spaghetti and toss. Makes about 5 cups.
4. Serve noodles sprinkled with onions garnished with chili garlic sauce and/or sesame seeds, if desired.
