4 (6-inch) PICS corn tortillas
1 cup liquid plant-based egg
1/4 teaspoon kosher PICS salt
1/4 teaspoon fresh cracked PICS black pepper
1 cup Full Circle Organic vegetarian refried beans
1/2 cup medium salsa verde
1 cup plant-based Cheddar cheese-style shreds
2 green onions, thinly sliced
1 small avocado, peeled, pitted and thinly sliced
1 radish, thinly sliced
1/2 cup quartered Full Circle cherry tomatoes
1 tablespoon Market 32 fresh cilantro leaves
PICS hot sauce for serving (optional)
1.Preheat oven to 400°; spray rimmed baking pan with cooking spray. Place tortillas on prepared pan; spray both sides with cooking spray. Bake 8 minutes or until golden brown and crisp, turning once.
2. Heat large nonstick skillet over medium heat; spray with cooking spray. Add liquid egg, salt and pepper; cook 3 minutes or until thoroughly cooked, stirring occasionally to scramble.
3. Spread tortillas with beans; top with egg scramble mixture, salsa verde and shreds. Bake huevos rancheros 10 minutes or until heated through and cheese melts. Makes 4 huevos rancheros.
4. Serve huevos rancheros topped with onions, avocado, radish, tomatoes and cilantro drizzled with hot sauce, if desired.
