Add pears; cook 5 minutes or until tender, stirring occasionally. Stir in brown sugar, 1\/4 teaspoon cinnamon and nutmeg; cook 1 minute or until brown sugar dissolves, stirring occasionally. Makes about 2 cups.<br \/>\n<\/span><\/p>\n<p><span class=\"recPrep\"><span>2.<\/span>Prepare pancake mix as label directs; whisk in 1\/4 cup ricotta and remaining 1\/4 teaspoon cinnamon. Makes about 3 cups.<br \/>\n<\/span><\/p>\n<p><span class=\"recPrep\"><span>3.<\/span>Preheat griddle or large nonstick skillet over medium heat; spray with cooking spray. Pour batter onto griddle using 1\/4-cup measuring cup to make 4 pancakes; cook 5 minutes or until golden brown and set, turning once. Repeat with remaining batter, spraying griddle with cooking spray as needed between batches.
