Coat 2 rimmed baking pans with 1 tablespoon oil each. In large bowl, toss onion, Brussels sprouts, squash, carrots, parsnips, salt, pepper and 1 tablespoon oil; transfer to 1 prepared pan. In same bowl, toss jalape\u00f1o and 1 teaspoon oil; transfer to remaining prepared pan. Roast 25 minutes or until golden brown.<br \/>\n<\/span><\/p>\n<p><span class=\"recPrep\"><span>2.<\/span>In large skillet, cook beef over medium-high heat 5 minutes or until browned, breaking up beef with side of spoon; drain and cover.<br \/>\n<\/span><\/p>\n<p><span class=\"recPrep\"><span>3.<\/span>In large skillet, cook eggs in remaining 1 tablespoon oil over medium heat 3 minutes or to desired doneness.<br \/>\n<\/span><\/p>\n<p><span class=\"recPrep\"><span>4.<\/span>Evenly divide beef into 4 bowls; top with roasted vegetables, eggs and jalape\u00f1os.
