For each sandwich, spread underside of 1 cookie with ice cream; top with 1 cookie, underside down. Sprinkle half of the edges of ice cream with blue sprinkles; sprinkle remaining half with red sprinkles, gently shaking off excess, and place on prepared pan in freezer. Repeat with remaining cookies, ice cream and sprinkles to make 15 more sandwiches; freeze sandwiches at least 1 hour or up to overnight.
