Line rimmed baking pan with aluminum foil; spray with cooking spray.<br \/>\n<\/span><\/p>\n<p><span class=\"recPrep\"><span>2.<\/span>In medium saucepan, heat orange zest and juice, cranberries, cranberry juice, pomegranate juice, wine, honey, shallot and 1\/2 teaspoon salt to a boil over medium-high heat, stirring occasionally. Reduce heat to medium; simmer 20 minutes or until thickened and reduced by half, stirring occasionally. Reserve 1 cup glaze for serving. Makes about 1-1\/2 cups glaze.<br \/>\n<\/span><\/p>\n<p><span class=\"recPrep\"><span>3.<\/span>Place salmon on prepared pan; sprinkle with remaining 1 teaspoon salt and pepper.
